  • 4 boneless, skinless chicken breasts
  • 1 cup cherry tomatoes, diced
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded mozzarella cheese (optional)
  • Extra basil leaves for garnish

Instructions

  1. Flatten each chicken breast slightly for even cooking. Season with salt and black pepper on both sides.
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until cooked through and golden brown. The internal temperature should reach 165°F (75°C).
  4. While the chicken cooks, combine the diced tomatoes, chopped basil, minced garlic, balsamic vinegar, and a pinch of salt in a medium bowl. Mix well.
  5. Once the chicken is done, lower the heat to medium. Spoon the bruschetta mixture evenly over the chicken in the skillet.
  6. If using, sprinkle shredded mozzarella on top of the bruschetta. Cover with a lid and allow the cheese to melt for 2-3 minutes.
  7. Remove from heat and garnish with additional fresh basil leaves for a pop of color.
  8. Transfer the chicken, with the bruschetta topping, to a serving platter.
