Slow Cooker Hawaiian Pineapple Chicken

Ingredients:
- 4 bone-in, skin-on chicken thighs
- 2 cups pineapple, cut into 1-inch chunks
- 1 yellow onion, cut into 1-inch chunks
- 3 tablespoons honey
- 2 tablespoons soy sauce
- 1/2 cup dark brown sugar
- 1 tablespoon grated ginger
- 2 garlic cloves, minced
- 2 teaspoons sesame seeds (optional)
- 1 tablespoon cornstarch
- 1 red bell pepper, cut into 1-inch chunks
- Parsley, for garnish
Directions:
- In a skillet or the cast aluminum slow cooker insert, brown the chicken thighs on both sides for 3-5 minutes over high heat. Remove from the slow cooker and set aside.
- Place pineapple and onion at the bottom of the slow cooker.
- In a bowl, combine honey, soy sauce, brown sugar, grated ginger, and minced garlic. Pour the mixture over the pineapple and onion in the slow cooker.
- Carefully place the browned chicken thighs back into the slow cooker.
- Cook on low for 5 hours or on high for 3 hours, until chicken is tender and fully cooked.
- In a small bowl, mix cornstarch with a tablespoon of water until smooth. Stir the mixture into the slow cooker along with the bell peppers.
- Cover and cook for an additional 30 minutes on high, allowing the sauce to thicken.
- Serve the Hawaiian pineapple chicken over rice, garnished with sesame seeds and parsley.
