  • 2 bell peppers (any color), sliced

  • 4 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil (optional)
  • Fresh basil or parsley for garnish (optional)
  • Hoagie rolls or rice, for serving (optional)

Instructions

  1. Slice the bell peppers and onion into thin strips. Mince the garlic.
  2. (Optional) In a skillet over medium heat, brown the Italian sausage for a few minutes to enhance flavor. Drain excess fat if necessary.
  3. Place the sliced bell peppers, onions, and minced garlic into the slow cooker.
  4. Place the browned sausage on top of the vegetables, then pour the diced tomatoes over everything.
  5. Sprinkle Italian seasoning, salt, and black pepper over the mixture. Drizzle with olive oil if desired for added richness.
  6. Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours. Stir occasionally if possible, but it’s not necessary.
  7. Ensure the sausage is cooked through and the vegetables are tender. The flavors should meld beautifully.
  8. Once cooked, stir the mixture gently and serve hot.
