Ingredients

  • 1/2 cup plain flour
  • 1/2 cup butter (softened)
  • 1/2 cup icing sugar
  • 1/2 cup desiccated coconut
  • 2 tablespoons liquid milk
  • 1/2 teaspoon baking powder

Instructions

  1. In a large mixing bowl, beat the softened butter and icing sugar together until the mixture becomes light and fluffy.
  2. Add the desiccated coconut, plain flour, and baking powder to the bowl. Mix until the wet and dry ingredients are well combined.
  3. Pour in the liquid milk and mix again until you achieve a smooth dough.
  4. On a flat working surface, spread out the dough and use a rolling pin to smooth it to your desired thickness.
  5. Use a cookie cutter to cut the dough into equal-sized pieces and place them on a prepared baking tray.
  6. Bake in a preheated oven at 180 degrees Celsius (350 degrees Fahrenheit) for 15 minutes or until the biscuits are golden and well baked.

If you need a larger batch, simply double the ingredients. Enjoy your delicious homemade coconut biscuits!
