Ingredients

Instructions
- In a small bowl, mix together the sugar, cinnamon, nutmeg, and salt. Set aside.
- Melt the butter in a large skillet over medium heat. Add the sweet potatoes, stirring to coat them evenly in the melted butter.
- Sprinkle the sugar mixture over the sweet potatoes, stirring well to ensure the potatoes are evenly coated.
- Cover the skillet and reduce the heat to low. Cook for about 1 hour, stirring occasionally, until the potatoes are tender and the sauce becomes a rich, dark color. The edges of the potatoes should be slightly firm.
- Just before serving, stir in the vanilla extract to add a final layer of flavor.
