Ingredients

  • 2 cups granulated sugar
  • 1 teaspoon ground cinnamon
  • 6 sweet potatoes, peeled and sliced
  • 1 teaspoon ground nutmeg
  • A pinch of salt
  • 1/2 cup unsalted butter
  • 1 tablespoon vanilla extract

Instructions

  1. In a small bowl, mix together the sugar, cinnamon, nutmeg, and salt. Set aside.
  2. Melt the butter in a large skillet over medium heat. Add the sweet potatoes, stirring to coat them evenly in the melted butter.
  3. Sprinkle the sugar mixture over the sweet potatoes, stirring well to ensure the potatoes are evenly coated.
  4. Cover the skillet and reduce the heat to low. Cook for about 1 hour, stirring occasionally, until the potatoes are tender and the sauce becomes a rich, dark color. The edges of the potatoes should be slightly firm.
  5. Just before serving, stir in the vanilla extract to add a final layer of flavor.
