Ingredients:

For the Chicken:

  • 4-5 pounds of chicken pieces (legs, thighs, breasts, wings)
  • 2 cups of buttermilk
  • 1 tablespoon of hot sauce (optional)
  • 2 cups of all-purpose flour
  • 1 tablespoon of salt
  • 1 teaspoon of black pepper
  • 1 teaspoon of paprika
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1 teaspoon of cayenne pepper (optional, for added heat)
  • Vegetable oil (for frying)

Instructions:

1. Marinate the Chicken:

In a large bowl, combine the buttermilk and hot sauce. Add the chicken pieces, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours, preferably overnight. This step tenderizes the chicken and infuses it with flavor.

2. Prepare the Coating:

In a separate large bowl, mix the flour, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper. This will be the seasoned coating for the chicken.

3. Coat the Chicken:

Remove the chicken pieces from the buttermilk marinade, allowing any excess to drip off. Dredge each piece in the flour mixture, ensuring it is thoroughly coated. For extra crispy chicken, you can dip each piece back into the buttermilk and then again into the flour mixture.

4. Heat the Oil:

In a large, deep skillet or Dutch oven, heat vegetable oil to 350°F (175°C). The oil should be deep enough to fully submerge the chicken pieces.

5. Fry the Chicken:

Carefully place the coated chicken pieces into the hot oil, being mindful not to overcrowd the skillet. Fry in batches if necessary. Cook each piece for about 12-15 minutes, turning occasionally, until golden brown and cooked through (internal temperature should reach 165°F/74°C).

6. Drain and Serve:

Once cooked, transfer the chicken to a wire rack or a plate lined with paper towels to drain any excess oil. Allow to rest for a few minutes before serving.
