Southern Fried Salmon Patties

Ingredients:

  • 1 (14 3/4 ounce) can of salmon
  • 1/4 cup finely chopped onion
  • 1/4 cup cornmeal
  • 1/4 cup flour
  • 1 egg
  • 3 tablespoons mayonnaise

Directions:

  1. Open the can of salmon and drain it thoroughly. Transfer the drained salmon to a mixing bowl and flake it evenly with a fork.
  2. Add the chopped onion, cornmeal, flour, mayonnaise, and egg to the bowl. Mix the ingredients until they are well combined.
  3. Shape the mixture into patties, each about the size of an average burger or slightly smaller.
  4. Heat oil in a skillet over medium heat. Cook the patties until they are browned on both sides, turning them once during cooking.

Note:

The mayonnaise not only helps the patties retain their shape but also prevents them from becoming too dry.
