Southern Fried Salmon Patties
Ingredients:
- 1 (14 3/4 ounce) can of salmon
- 1/4 cup finely chopped onion
- 1/4 cup cornmeal
- 1/4 cup flour
- 1 egg
- 3 tablespoons mayonnaise
Directions:
- Open the can of salmon and drain it thoroughly. Transfer the drained salmon to a mixing bowl and flake it evenly with a fork.
- Add the chopped onion, cornmeal, flour, mayonnaise, and egg to the bowl. Mix the ingredients until they are well combined.
- Shape the mixture into patties, each about the size of an average burger or slightly smaller.
- Heat oil in a skillet over medium heat. Cook the patties until they are browned on both sides, turning them once during cooking.
Note:
The mayonnaise not only helps the patties retain their shape but also prevents them from becoming too dry.
