Spaghetti Crust:

  • 200g (7oz) Spaghetti
  • 1 tbsp (15g) Butter, melted
  • 2 Eggs
  • 2 tbsp Parmesan Cheese

Ricotta Layer:

  • 400g (14oz) Ricotta
  • 2 tbsp Fresh Basil, chopped

Meat Sauce:

  • 250g (8.8oz) Ground Beef
  • 250g (8.8oz) Ground Pork
  • 1 Medium Onion, chopped
  • 700g (24.7oz) Jar Tomato Juice (Passata)
  • 3 Garlic Cloves, minced
  • 1 tbsp Tomato Paste
  • 1 tsp Dried Oregano
  • 2 tbsp Fresh Basil, chopped
  • 1 tsp Sugar
  • 1/4 tsp Piri Piri Seasoning (mixed chili seasoning)
  • Salt & Pepper to taste

Topping:

  • 1 Cup (100g) Shredded Mozzarella Cheese
  • 2 tbsp Parmesan Cheese
  • Freshly Ground Pepper
  • Fresh Basil for garnish

Method:

Meat Sauce:

  1. In a pan, fry the onions in a little olive oil until softened.
  2. Add minced garlic and cook for an additional minute until fragrant.
  3. Add ground beef and pork, cooking until browned.
  4. Stir in tomato paste and tomato juice, followed by dried oregano, chopped basil, piri seasoning, sugar, salt, and pepper.
  5. Simmer uncovered for 30 minutes. Remove from heat and let cool slightly.

Ricotta Layer:

  1. In a small bowl, mix the ricotta and chopped basil.

Spaghetti Crust and Assembly:

  1. In a medium bowl, mix the eggs, melted butter, and Parmesan cheese.
  2. Cook the spaghetti according to package instructions, drain, and toss into the egg mixture.
  3. Butter a 20cm (8-inch) springform cake tin. Press the spaghetti mixture into the tin, forming a crust at the base and 3/4 up the sides.
  4. Spread the ricotta mixture over the spaghetti base.
  5. Top with the meat sauce, followed by shredded mozzarella, Parmesan cheese, and freshly ground pepper.
  6. Place the tin on a baking tray lined with baking paper to catch any leakage. Bake in a preheated oven at 200Β°C (400Β°F) for 30-45 minutes, until the cheese is melted and golden.
  7. Remove from oven and let rest for 10 minutes before removing from the tin.

Serve the Spaghetti Pie on its own or with a crisp salad and warm garlic bread. Enjoy!
