Spicy Cajun Salmon and Shrimp Delight

Recipe

Ingredients:

  • 2 salmon fillets (approximately 6 oz each)
  • 12 large shrimp, peeled and deveined
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup chicken or vegetable broth
  • Salt and pepper to taste
  • Fresh parsley for garnish

Directions:

  1. Evenly sprinkle the Cajun seasoning over both sides of the salmon fillets and shrimp.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Add the salmon fillets to the skillet and cook for about 4 minutes on each side, or until fully cooked. Remove and set aside.
  4. In the same skillet, add the shrimp and cook for about 2 minutes on each side, or until pink and opaque. Remove and set aside.
  5. If needed, add more oil to the skillet, then sautΓ© the bell peppers, onion, and garlic until they begin to soften.
  6. Add the cherry tomatoes and broth, and let the mixture simmer for about 5 minutes, or until the vegetables are tender.
  7. Return the salmon and shrimp to the skillet, allowing them to warm through.
  8. Season with salt and pepper to taste, garnish with fresh parsley, and serve immediately.
