  • 1 cup Hatch green chilies, diced
  • 1/2 cup red bell pepper, diced
  • 1/2 cup onion, diced
  • 3 large eggs
  • 1/4 cup milk
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas (10 inches)
  • Olive oil or cooking spray
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)
  • Avocado slices (optional)

Instructions

  1. Sauté the Vegetables: In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced onion and red bell pepper, cooking for about 3-4 minutes until softened.
  2. Cook the Turkey: Add the ground turkey to the skillet, breaking it apart with a spatula. Season with salt and pepper. Cook until browned and fully cooked through, approximately 5-7 minutes.
  3. Add Chilies: Stir in the diced Hatch green chilies and continue to cook for another 2-3 minutes until heated through. Remove the skillet from heat.
  4. Prepare the Eggs: In a medium bowl, whisk the eggs and milk together until well combined. Season with a pinch of salt and pepper.
  5. Scramble the Eggs: Wipe the skillet clean and return it to the stove over medium-low heat. Pour in the egg mixture and cook, stirring gently with a spatula, until the eggs are fully scrambled and just set, about 3-4 minutes.
  6. Combine Fillings: Once the eggs are cooked, gently fold the turkey and chili mixture into the scrambled eggs. Add in the shredded cheddar cheese and stir until the cheese is melted and everything is well combined.
  7. Assemble the Wraps: Lay out the flour tortillas on a clean surface. Divide the turkey-egg mixture among the wraps, placing it towards the center. If desired, add slices of avocado on top.
