Sticky BBQ Chicken Zucchini Boats are a fun, flavorful, and healthy way to enjoy classic BBQ flavors. This recipe features tender shredded chicken coated in sticky BBQ sauce nestled in fresh zucchini boats, topped with melted cheese.

  • 4 medium zucchinis
  • 2 cups cooked shredded chicken
  • 1 cup BBQ sauce
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Optional: Chopped green onions or parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise. Scoop out the center to create boats, leaving about 1/4 inch of zucchini on the sides.
  3. Brush the zucchini halves with olive oil and season with salt and pepper. Place them cut-side up on a baking sheet.
  4. In a large mixing bowl, combine the cooked shredded chicken with BBQ sauce until well coated.
  5. Spoon the BBQ chicken mixture into each zucchini boat.
  6. Sprinkle shredded cheese evenly over the top of each filled zucchini boat.
