Texas Toast Sloppy Joes

Ingredients:

  • 1 small onion, finely diced (approximately 1 cup)
  • 1 pound ground beef (or ground turkey or chicken)
  • 1 cup barbecue sauce (such as Sweet Baby Ray’s Sweet and Spicy)
  • 6 slices Texas Toast garlic bread
  • 1 cup shredded sharp cheddar cheese

Instructions:

  1. Begin by finely dicing 1 small onion. In a large skillet, combine the diced onion with 1 pound of ground beef (or your preferred alternative). Cook over medium-high heat until the beef is browned and the onion is tender, typically 5-7 minutes. Drain any excess grease.
  2. Add 1 cup of your favorite barbecue sauce to the cooked ground beef and onions. Stir well to evenly coat the meat. Feel free to use a barbecue sauce with your preferred level of sweetness and spice. We recommend Sweet Baby Ray’s Sweet and Spicy for a delightful kick!
  3. Preheat your oven to 425Β°F. Line a baking sheet with foil and arrange 6 slices of frozen Texas Toast garlic bread on the sheet. Bake for 5-8 minutes or until the garlic bread is lightly toasted.
  4. Once the garlic bread is toasted, remove it from the oven. Spoon the sloppy joe mixture onto each slice of garlic bread, dividing it evenly among them.
  5. Sprinkle shredded sharp cheddar cheese over the top of each sloppy joe.
  6. Return the loaded garlic bread to the oven and bake just until the cheese is melted, approximately 2-3 minutes.
  7. Remove from the oven and serve immediately, while hot and gooey.


Preheat your oven to 180Β°C/350Β°F.

Scatter chopped onion and minced garlic in a baking dish (approximately 10 x 15″ / 25 x 35 cm), then place butter in the center. Bake for 15 minutes, checking at 12 minutes and stirring if needed to prevent excessive browning.

While the onions and garlic are baking, prepare the Chicken Rub by combining all the spices in a bowl. Sprinkle the rub evenly on both sides of the chicken thighs.

Remove the baking dish from the oven. Add uncooked rice to the onion and garlic mixture, and stir to combine.

Arrange the seasoned chicken thighs on top of the rice in the baking dish. Pour hot chicken broth and water around the chicken.

Cover the baking dish with foil and bake for 30 minutes. Then, remove the foil, optionally spray the chicken with oil for a nicer finish, and bake for an additional 20 minutes or until the liquid is absorbed, and the chicken and rice are cooked through.

Allow the dish to stand for 5 minutes before serving. Garnish with fresh thyme leaves or chopped parsley if desired. Serve and savor the irresistible flavors!

Optional Gravy:

While the dish is flavorful on its own, you can elevate it even further with a quick homemade gravy.
