  • 4 ripe peaches, peeled and pitted
  • 1 cup coconut milk
  • 1 cup vegetable broth
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tbsp honey or maple syrup (for sweetness)
  • Juice of 1 lime
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for another 1-2 minutes until fragrant.
  2. While the onions and garlic are cooking, slice the fresh peaches. Add the sliced peaches to the pot and stir for a couple of minutes to soften them.
  3. Pour in the vegetable broth and bring the mixture to a gentle simmer. Allow it to cook for about 10 minutes, until the peaches are fully softened.
  4. Stir in the coconut milk, honey (or maple syrup), and lime juice. Using an immersion blender, blend the mixture until creamy and smooth. (Alternatively, you can transfer it to a blender in batches.)
  5. Taste and season with salt and pepper as desired.
  6. Serve warm or chilled, garnished with freshly torn basil leaves for an aromatic finish.

  • For a smoother texture, you can peel the peaches, although leaving the skin on adds nutrients and color.
  • Avoid browning the garlic, as it can impart a bitter taste to your soup.
