  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium skillet, heat the olive oil over medium heat. Add the diced sweet potatoes and cook for about 10 minutes, stirring occasionally, until they are fork-tender.
  3. Stir in the chopped kale and cook for an additional 2-3 minutes until the kale is wilted.
  4. In a large bowl, whisk together the eggs, milk, salt, pepper, and garlic powder until well combined.
