Sweet & Sour Meatballs
Experience the perfect blend of flavors with our Sweet & Sour Meatballs recipe. Juicy pre-made mini meatballs, tender onion slices, vibrant bell peppers, and succulent pineapple come together in a delightful harmony of taste. Ingredients:
- 2 tbsp vegetable oil
- 500g (1 lb) pre-made mini meatballs
- 1 onion, sliced
- 1 capsicum (bell pepper), cut into bite-sized pieces
- 1 cup diced fresh pineapple
- 4 spring onions (scallions), trimmed, green and white parts cut into 3cm (just over 1β) batons
- Steamed rice, to serve
Sweet & Sour Sauce:
- Β½ cup brown sugar
- 3 tbsp white vinegar
- 2 tbsp tomato ketchup
- 1 tbsp light soy sauce
- 1/3 cup pineapple juice
- ΒΌ tsp Chinese five spice
- 2 tsp cornflour (cornstarch), mixed with 2 tbsp water
Instructions:
Step 1: Prepare the sweet & sour sauce by combining brown sugar, white vinegar, tomato ketchup, soy sauce, pineapple juice, and Chinese five spice in a saucepan over medium-high heat. Simmer for 5 minutes until the sugar dissolves. Thicken the sauce by adding the cornflour mixture and simmering for an additional 2 minutes. Set aside.
Step 2: Heat a clean wok or large frying pan over high heat. Add vegetable oil and pre-made mini meatballs. Cook for 4-5 minutes, turning occasionally, until almost cooked through. Stir in sliced onion and cook for an additional 2 minutes. Add bell pepper pieces and stir-fry for 1 minute. Incorporate diced pineapple and the prepared sweet & sour sauce, stirring until well combined. Remove from heat and garnish with spring onions. Serve hot with steamed rice for a delightful meal.
