1 cup roasted butternut squash, diced
1 cup cranberries (fresh or dried)
1 cup sliced apples (such as Granny Smith or Honeycrisp)
½ cup toasted pecans or walnuts
½ cup crumbled feta cheese or goat cheese (optional)
¼ cup red onion, thinly sliced
¼ cup balsamic vinaigrette dressing
Salt and pepper, to taste
Instructions
Wash and dry the salad greens thoroughly. Place them in a large salad bowl.
Roast the Squash: Preheat your oven to 425°F (220°C). Toss diced squash with a little olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender and slightly caramelized.
Add Fresh Ingredients: Slice the apples and add them to the bowl with the salad greens. Include the cranberries and red onion for extra flavor.
