Ingredients:
- 1 pound of crab meat (canned, fresh, or thawed if frozen)
- 1 large carrot, grated
- 1 small onion, diced
- 1 cup of mayonnaise
- 1 tablespoon of ground mustard
- 2 tablespoons of Worcestershire sauce
- 2 cups of seasoned breadcrumbs (set aside 1/4 cup for coating)
- 1 teaspoon of cayenne pepper
- Salt and pepper to taste
- 1 tablespoon of garlic powder
- 1 1/2 cups of egg beaters
- 1/4 cup of vegetable or canola oil (more if needed)
Instructions:
- In a medium bowl, combine the crab meat, grated carrot, diced onion, mayonnaise, ground mustard, and Worcestershire sauce. Season with cayenne pepper, garlic powder, salt, and pepper.
- Add the seasoned breadcrumbs and egg beaters to the mixture, and thoroughly combine until evenly distributed.
- Take small handfuls of the crab mixture and shape them into hockey puck-sized cakes.
- Coat the formed crab cakes in the reserved seasoned breadcrumbs and place them on a baking sheet.
- Cover the crab cakes and freeze them for at least one hour.
- In a large skillet, heat the vegetable or canola oil over medium-high heat. Carefully add the crab cakes in batches, frying them until golden brown on both sides.
- Transfer the fried crab cakes to a baking sheet and bake in a preheated 350°F oven for 15 minutes.
