Prepare the Pie Crust: In a large bowl, combine flour, salt, and sugar. Cut in cold butter until mixture resembles coarse crumbs. Gradually add ice water until dough forms a ball. Divide in half, shape into discs, wrap, and refrigerate for at least 1 hour.
Make the Apple Filling: Toss sliced apples with sugar, cinnamon, nutmeg, lemon juice, and flour. Let marinate for 30 minutes.
Preheat Oven: Set oven to 425°F (220°C).
Roll Out Dough: On a floured surface, roll out one dough disc to fit a 9-inch pie pan. Place in pan, covering edges.
