Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened.
  3. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  4. Add the vegetable or chicken broth to the pot. Bring the mixture to a gentle boil.
  5. Once boiling, add the tortellini. Cook according to the package instructions, typically about 3-5 minutes.
