  • 1 teaspoon salt

  • 1 cup unsalted butter, chilled and diced
  • 6–8 tablespoons ice water
  • 6–8 cups thinly sliced apples (Granny Smith and Honeycrisp mix recommended)
  • ¾ cup brown sugar, packed
  • ¾ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 tablespoons all-purpose flour for filling
  • 1 tablespoon lemon juice
  • 1 tablespoon butter, to dot
  • 1 egg, beaten for egg wash

Instructions

  1. Combine flour, salt, and sugar in a large bowl. Cut in butter until mixture resembles coarse crumbs.
  2. Stir in ice water, one tablespoon at a time, until a ball forms. Divide dough in half, shape into discs, wrap in plastic, and refrigerate for at least 1 hour.
  3. Preheat oven to 425°F (220°C).
  4. In a large bowl, mix sliced apples, brown sugar, cinnamon, nutmeg, flour, and lemon juice.
  5. Roll out one dough disc on a floured surface to fit a pie pan. Place it in the pan and trim excess.
  6. Fill the crust with the apple mixture. Dot with butter.
  7. Roll out the second dough disc and place it over the filling. Cut slits for steam. Trim and crimp edges.
  8. Brush the top crust with beaten egg.
  9. Bake at 425°F (220°C) for 15 minutes. Reduce heat to 350°F (175°C) and bake for 30–35 minutes, or until golden and bubbly.
  10. Cool on a wire rack for at least 30 minutes before slicing.
