  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground turmeric

  • 4 cups vegetable broth
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (14 oz) coconut milk
  • 2 cups kale or spinach, chopped
  • Salt and pepper to taste
  • Fresh cilantro, for garnish (optional)
  • Lemon wedges, for serving (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
  3. Sprinkle in the turmeric, cumin, and coriander. Stir to combine and let the spices toast for about 30 seconds.
  4. Add the vegetable broth to the pot, stirring well to combine all ingredients.
  5. Add the drained chickpeas and bring the mixture to a gentle simmer.
  6. Pour in the coconut milk and stir until well mixed. Allow the soup to simmer for another 10 minutes.
  7. Stir in the chopped kale or spinach, cooking until wilted, about 3-5 minutes.
  8. Taste the soup and season with salt and pepper as needed.
  9. Ladle the soup into bowls and garnish with fresh cilantro if desired.
