- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- ½ teaspoon ground coriander
- 4 cups vegetable broth
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (14 oz) coconut milk
- 2 cups kale or spinach, chopped
- Salt and pepper to taste
- Fresh cilantro, for garnish (optional)
- Lemon wedges, for serving (optional)
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
- Sprinkle in the turmeric, cumin, and coriander. Stir to combine and let the spices toast for about 30 seconds.
- Add the vegetable broth to the pot, stirring well to combine all ingredients.
- Add the drained chickpeas and bring the mixture to a gentle simmer.
- Pour in the coconut milk and stir until well mixed. Allow the soup to simmer for another 10 minutes.
- Stir in the chopped kale or spinach, cooking until wilted, about 3-5 minutes.
