Ingredients

Scale
  • 1 medium cucumber, finely grated
  • 3/4 cup plain Greek yogurt
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cooked rotisserie chicken, shredded
  • 1/2 red onion, diced

Instructions

  1. Wrap the grated cucumber in a paper towel and gently squeeze out excess moisture. Combine the squeezed cucumber with Greek yogurt, fresh dill, lemon juice, minced garlic, salt, and pepper in a bowl. Stir well to mix.
  2. Add the shredded rotisserie chicken and diced red onion to the tzatziki sauce mixture. Toss everything together until the chicken is evenly coated.
  3. Serve this delicious Tzatziki Chicken Salad on pita bread with sliced tomato and red onion, with crackers, or over a bed of lettuce. Refrigerate any leftovers.

Notes

  • For best results, use full-fat Greek yogurt.
  • Adjust seasoning to your preference.
  • You can substitute a pre-cooked chicken breast if not using rotisserie chicken.
  • Add other vegetables like chopped celery or bell peppers for extra crunch.
