Ultimate Banana Pudding Cake

Ingredients:

  • 1/2 cup sugar
  • 2 tablespoons flour
  • 1/4 teaspoon salt
  • 2 cups milk
  • 4 eggs, separated
  • 1 tablespoon vanilla extract
  • 1 box Nilla Vanilla Wafers
  • 4 medium ripe bananas

Instructions:

  1. In a saucepan, mix together sugar, flour, and salt. Gradually add milk while stirring constantly over low heat until the mixture thickens.
  2. Continue stirring and cooking for about 15 minutes. In a separate bowl, beat egg yolks and slowly stir them into the mixture, continuing to stir constantly. Cook for an additional 5 minutes.
  3. Remove from heat and stir in vanilla extract. Line the bottom of a casserole dish with a layer of vanilla wafers, followed by sliced bananas, and then the custard mixture. Repeat the layers, ending with a layer of custard on top.
  4. In another bowl, beat egg whites until stiff peaks form. Gradually add 1/4 cup sugar and continue to beat until peaks hold. Spread this meringue mixture on top of the custard layer.
  5. Bake in the oven at 450 degrees Fahrenheit for about 5 minutes or until the meringue is lightly browned.
  6. Remove from heat and serve warm. Enjoy!
