Ingredients:

  • 1 “party size” bag of Nacho Cheese Doritos (14 ounces)
  • 1 ½ – 2 pounds ground beef
  • 1 can (10 3/4 ounce) cheddar cheese soup
  • 1 can (10 3/4 ounce) cream of chicken soup
  • 1 can (12 ounce) evaporated milk
  • 1 can (4 ounce) diced green chilies
  • 2-3 cups shredded Mexican cheese blend
  • 1 packet taco seasoning (optional)
  • Sour cream, diced green onion, sliced cherry tomatoes, sliced avocado or guacamole, salsa (for serving)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large pan, brown the ground beef over medium heat, then drain off the excess fat. If using taco seasoning, mix it in thoroughly with the beef.
  3. To the same pan, add the cheddar cheese soup, cream of chicken soup, evaporated milk, and diced green chilies to the ground beef. Cook, stirring, until the mixture is heated through and bubbly.
  4. Prepare a baking dish by spraying it with non-stick spray.
  5. Layer half of the Doritos on the bottom of the baking dish, breaking them up slightly.
  6. Spoon half of the meat mixture over the chips.
  7. Sprinkle 1 cup of shredded cheese evenly over the meat layer.
  8. Repeat the layers of chips, meat, and cheese with the remaining ingredients.
  9. Bake for approximately 20 minutes or until the cheese is melted and the casserole is heated through.
  10. Serve hot, garnished with sour cream, diced green onions, sliced cherry tomatoes, avocado or guacamole, and salsa on the side. Enjoy this irresistible Cheesy Dorito Casserole with friends and family!
