Vegetable Soup Recipe

Ingredients:

  • 1/4 cup olive oil
  • 1 yellow onion, finely diced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • 2 teaspoons kosher salt
  • 1/2 teaspoon ground black pepper
  • 1 large potato, peeled and diced
  • 2 carrots, sliced
  • 1 cup corn kernels
  • 1 cup peas
  • 1 cup green beans, chopped
  • 2 vine-ripened tomatoes, diced
  • 4 cups chicken broth
  • 2 cups V-8 vegetable juice

Instructions:

  1. In a large stockpot, heat the olive oil over medium heat. Add the diced onions, celery, and garlic, and sauté for 4-5 minutes until the onions are translucent and fragrant.
  2. Add the remaining ingredients to the pot. Bring the mixture to a boil, then reduce the heat to a simmer. Let it cook gently for 30 minutes until the vegetables are tender and the flavors are well combined.
