Savory Vietnamese Rotisserie Chicken for Effortless Dinners

  • 8 pieces Chicken Drumsticks
  • 1 teaspoon Salt
  • 2 tablespoons Five-Spice Powder
  • 1/4 cup Soy Sauce
  • 3 tablespoons Honey
  • 2 cloves Garlic
  • 3 pieces Shallots
  • 1 cup Cooking Oil
  • 1 cup Coconut Juice

Instructions

  1. In a large bowl, combine salt, five-spice powder, soy sauce, and honey. Add chicken, garlic, and shallots, ensuring they are coated. Cover and refrigerate for at least 2 hours or let sit for 20-30 minutes.
  2. Heat 1-2 inches of cooking oil in a deep pan over medium heat. Remove garlic and shallots, then fry chicken in batches until golden brown, about 8-10 minutes.
  3. Once all chicken is fried, discard excess oil, leaving 1 tablespoon. Pour in reserved marinade and coconut juice, bringing to a boil. Reduce to a simmer.
  4. Simmer for about 20 minutes, stirring occasionally. Adjust seasoning with more salt or honey if needed, until sauce is glossy.
  5. Transfer chicken to a serving plate. Drizzle with sauce and garnish with herbs if desired. Serve hot with rice.
