2 cups granulated sugar
1 cup light corn syrup
1 cup water
2 tablespoons unflavored gelatin powder
1 teaspoon vanilla extract
Food coloring (2 colors of your choice)
Powdered sugar, for dusting
Cornstarch, for dusting
Instructions
Grease a 9×13-inch baking dish with non-stick spray and dust it with a mixture of powdered sugar and cornstarch.
Bloom the Gelatin: In a small bowl, combine the gelatin with ½ cup of water. Let it sit for about 10 minutes to bloom.
Cook the Sugar Mixture: In a saucepan, combine the granulated sugar, corn syrup, and ½ cup of water. Cook over medium heat, stirring until dissolved. Bring the mixture to a boil and let it cook without stirring until it reaches 240°F (115°C) on a candy thermometer.
Once the sugar mixture reaches the right temperature, remove it from heat. Carefully add the bloomed gelatin to the hot syrup, stirring until fully dissolved.
Pour the mixture into a large mixing bowl. Using an electric mixer, beat on high speed for about 10-15 minutes until it becomes thick and fluffy. Add the vanilla extract during the last minute of mixing.
Once whipped, divide the marshmallow mixture into two bowls. Add a few drops of food coloring to each bowl, mixing until the desired colors are achieved.
Spoon the first color into the prepared baking dish, smoothing it out evenly. Next, spoon the second color on top, gently spreading it out to cover the first layer.
Let the marshmallows sit at room temperature for at least 4 hours or overnight to set completely.
Once fully set, dust a cutting board with powdered sugar and cornstarch. Flip the marshmallow slab onto the board and cut it into squares. Dust the cut edges with more powdered sugar to prevent sticking.
