Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together the orange juice, lime juice, olive oil, soy sauce, Worcestershire sauce, and apple cider vinegar. Add minced garlic, red pepper flakes, and ground cumin. Blend well.
  2. Marinate the Steak: Place the skirt steak in a large baking dish or zip-top bag. Pour the zesty marinade over it, ensuring all sides are coated.
  3. Refrigerate: Cover the dish or seal the bag. Refrigerate for at least 2 hours, but no more than 6 hours. Flip halfway through for even marination.
  4. Prepare for Cooking: Remove steak from the refrigerator and discard excess marinade. Pat the meat dry with paper towels. Season with salt and pepper.
  5. Preheat the Grill: Preheat your grill to high heat (450°F to 500°F).
  6. Cook the Steak: Grill the skirt steak for 3-4 minutes per side for medium-rare.
  7. Rest and Slice: Let the steak rest for 5 minutes. Slice thinly against the grain.
