Zucchini and Oatmeal Delight: A Healthy and Delectable Alternative to Meat

Ingredients:

  • 1 zucchini (350g)
  • 1 carrot
  • 2 eggs
  • 100 grams of cheese
  • Parsley
  • 1 potato
  • 1 clove of garlic
  • Salt
  • Black pepper
  • 1 tsp Herbes de Provence
  • Paprika
  • 4 tablespoons oatmeal
  • 2 tbsp flour
  • Olive oil

Instructions:

  1. Grate the zucchini, carrot, potato, and cheese into a large bowl.
  2. Mince the garlic and chop the parsley, then add them to the bowl.
  3. Crack the eggs into the mixture and stir well.
  4. Season with salt, black pepper, Herbes de Provence, and paprika to taste.
  5. Add the oatmeal and flour, mixing until well combined.
  6. Heat a generous amount of olive oil in a frying pan over medium heat.
  7. Drop spoonfuls of the mixture into the pan, flattening them slightly with the back of a spoon.
  8. Fry each side for 4-5 minutes, or until golden brown and crispy.

For the Sauce:

  • 2 tablespoons sour cream or yogurt
  • 1 tbsp mayonnaise
  • Dill
  • 1 tsp dried garlic
  • 1 tsp smoked paprika powder

Instructions:

  1. In a small bowl, mix together the sour cream or yogurt, mayonnaise, dill, dried garlic, and smoked paprika powder.
  2. Serve the zucchini and oatmeal patties hot with the prepared sauce on the side.
