Zucchini, Egg, and Cheese Patties
Ingredients:
- 12 ounces zucchini or summer squash (1 large or 2 small zucchini)
- 1 1/2 teaspoons kosher salt
- 2 large eggs
- 1 medium lemon
- 2 medium scallions
- 6 sprigs fresh parsley or fresh dill, or a combination
- 1 sprig fresh mint (optional)
- 2 1/2 ounces feta cheese (1/2 cup crumbled)
Instructions:
- Prepare Zucchini: Grate the zucchini using a box grater or a food processor. Place in a colander, sprinkle with 1 teaspoon of kosher salt, and let sit for 10 minutes. Squeeze out excess moisture.
- Mix Ingredients: In a large bowl, whisk eggs. Zest lemon into bowl, finely chop scallions, parsley (and/or dill), and mint (if using), and add to bowl. Crumble feta cheese into mixture and stir.
- Combine and Form Patties: Add zucchini to egg mixture. Mix well until combined. Form mixture into patties.
- Cook the Patties: Heat non-stick skillet over medium heat. Add oil. Cook patties in batches, 3-4 minutes each side, until golden brown and crispy.
- Serve: Transfer patties to plate lined with paper towels. Serve warm.
