  • 1 and 1/2 tsp pure vanilla extract

Instructions:

  1. Preheat the oven to 425°F (218°C). Prepare a 12-count muffin tray with nonstick spray or line with cupcake liners. This recipe yields about 14 muffins, so prepare a second muffin pan in the same manner or bake in batches.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, salt, and chocolate chips. Set aside.
  3. In another bowl, whisk together the eggs, sour cream, oil, milk, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and fold together with a rubber spatula or wooden spoon until fully combined. Be careful not to overmix; the batter should be thick and sticky.
  5. Spoon the batter into the prepared muffin liners, filling them all the way to the top.
  6. Bake the muffins at 425°F (218°C) for 5 minutes, then reduce the oven temperature to 350°F (177°C) without removing the muffins. Continue baking for an additional 15-16 minutes, or until a toothpick inserted into the center comes out clean. Total baking time should be around 20-21 minutes. (For mini muffins, bake for 13-14 minutes at 350°F (177°C) throughout.)
  7. Allow the muffins to cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.
  8. Store leftover muffins at room temperature for up to 5 days or in the refrigerator for up to 1 week.
