One of the simplest and most comforting dishes is Yorkshire pudding topped with mashed potatoes, peas, sausages, and a rich onion gravy. It’s the perfect twist on a traditional Sunday roast! 😉

Recipe:

Serves: 2

Ingredients 🛒

Yorkshire Pudding:

  • 1 cup plain flour
  • 1 cup milk
  • 2 eggs
  • Pinch of salt
  • Vegetable oil
  • 2 (22cm x 17cm) dishes

Onion Gravy:

  • 25g (1 oz) unsalted butter
  • 1 medium onion, halved and sliced
  • 2 teaspoons sugar
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 1/2 cups beef stock
  • 1 teaspoon balsamic vinegar
  • 1 tablespoon unsalted butter
  • 1 tablespoon cornflour (cornstarch) mixed with a little water

Other Ingredients:

  • Mashed potatoes
  • Sausages
  • Frozen peas

Method:

Onion Gravy:

  1. Melt the butter in a pan over medium heat. Add the sliced onions and sugar, cooking until caramelized and deep golden in color.
  2. Add the thyme, sage, mustard, Worcestershire sauce, and beef stock. Bring to a boil, then reduce to a simmer, covering and cooking for 20 minutes.
  3. Stir in the balsamic vinegar and the cornflour mixture, simmering until thickened while stirring continuously.
  4. Add the remaining tablespoon of butter, stirring until fully incorporated. Season with salt and pepper to taste.

Yorkshire Pudding:

  1. Place the flour in a bowl, creating a well in the center. Crack the eggs into the well, adding a little milk. Using a whisk, start mixing, gradually adding the remaining milk until the batter is smooth and lump-free. Let the batter rest at room temperature for 1 hour.
  2. Preheat the oven to 220°C (425°F).
  3. Add a little vegetable oil to each dish, enough to cover the base. Place the dishes in the oven to heat until the oil is very hot, about 15 minutes.
  4. Stir the batter, season with a pinch of salt, and pour it into a jug.
  5. Carefully remove the hot dishes from the oven and evenly pour the batter into them. Return the dishes to the oven and bake for 25-30 minutes, undisturbed, until the puddings are puffed up and golden brown.
  6. Serve immediately, topped with mashed potatoes, sausages, peas, and onion gravy.

Enjoy your Yorkshire Pudding Plate! 😊
