Ingredients:
- 3 eggs
- ¾ cup of sugar
- ¾ cup of oil
- A pinch of salt
- 1 tablespoon of liquid apricot jam
- 1 cup of high-quality, rich coconut
- Zest of one lemon
- 1 teaspoon of lemon flavoring
- 500 grams of fine semolina
- 2 packets of baking powder
- Special powdered sugar for coating (can add starch for extra texture)
Instructions:
- In a mixing bowl, thoroughly beat the eggs, sugar, and a pinch of salt.
- Add the oil, apricot jam, lemon zest, and lemon flavoring, and mix well.
- Incorporate the coconut and mix until well combined.
- Gradually add the semolina and baking powder, mixing continuously until the dough is sticky. Let the mixture rest for 5 minutes.
- Moisten your hands with orange blossom water, shape the dough into small balls, and roll them in the special powdered sugar.
- Preheat the oven and set it to a low temperature. Place the cookies on a baking sheet.
- Bake until the cookies crack on the surface and are cooked through.
