Easy Madeleine Cake Recipe
Ingredients:
- 4 eggs
- 120g sugar
- 80g flour
- 60g cornstarch
- 40g butter, melted
- A pinch of salt

Preparation of Batter:
In a mixing bowl, whisk together eggs and sugar. Place the bowl over a double boiler with simmering water and whisk continuously using an electric mixer until the mixture becomes fluffy and doubles in volume.

Incorporating Ingredients:
Once the egg mixture is fluffy, remove from heat and continue whisking with the electric mixer until it cools down. Gently fold in the melted butter, ensuring it is well incorporated.

Adding Dry Ingredients:
Sift in the flour and cornstarch gradually, folding gently from bottom to top until fully combined. Add a pinch of salt and mix gently.

Baking:
Preheat the oven to 180°C (350°F). Butter and flour a 23-24 cm (9-10 inch) diameter cake mold. Pour the batter into the prepared mold and smooth out the top.

Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.

Once baked, let the cake cool in the mold for a few minutes. Remove from the mold and let it cool completely on a wire rack. Dust with powdered sugar before serving.
