Instructions

  1. In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until well combined. Press the mixture into the bottom of a 9-inch springform pan to form an even crust.
  2. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  3. Gradually add the powdered sugar and vanilla extract to the cream cheese, beating until fully incorporated and smooth.
  4. In another bowl, whip the heavy cream until soft peaks form.
  5. Gently fold the whipped cream into the cream cheese mixture until fully combined.
  6. Fold in the sliced strawberries gently into the cream cheese mixture.
  7. Spoon the cheesecake filling into the prepared crust, smoothing the top with a spatula.
  8. Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
  9. If desired, heat the strawberry jam slightly until it becomes pourable. Drizzle it over the top of the cheesecake before serving.
  10. Once chilled and set, carefully remove the sides of the springform pan. Cut into slices and serve chilled.
