Ingredients
Scale
4 ripe bananas, sliced
1 tablespoon unsalted butter
¾ cup packed brown sugar
1 teaspoon vanilla extract
1 teaspoon cinnamon
¼ teaspoon ground nutmeg
1 tablespoon dark rum (optional)
Pinch of salt
1½ cups all-purpose flour
1 tablespoon baking powder
¾ cup granulated sugar
½ teaspoon salt
6 tablespoons cold unsalted butter, cubed
½ cup buttermilk
1 teaspoon vanilla extract
Instructions
Preheat your oven to 375°F (190°C). Grab a 9-inch baking dish-no need to grease it.
Melt the butter in a large skillet over medium heat. Once it’s just starting to bubble, add your sliced bananas. Gently toss them around for about 1 minute-just until they start to soften.
Add the brown sugar, cinnamon, nutmeg, and salt. Stir gently-you don’t want to mush the bananas! Let it bubble away for 2-3 minutes until the sugar melts into a gorgeous caramel sauce.
Remove from heat and stir in the vanilla and rum (if using). Careful-it might sizzle! The bananas should be soft but not falling apart, swimming in that dreamy sauce. Pour everything into your baking dish.
