Barley Kale And Romano Beans Soup: An Incredible Ultimate Recipe

  • 1 cup pearl barley
  • 1 can (15 oz) Romano beans, drained and rinsed
  • 4 cups vegetable broth
  • 2 cups water
  • 2 cups chopped kale
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Gather all the ingredients and chop the vegetables as needed.
  2. In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables soften.
  3. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  4. Add the pearl barley to the pot, stirring to combine with the sautéed vegetables.
  5. Pour in the vegetable broth and water. Bring the mixture to a boil.
  6. Add the dried thyme, oregano, salt, and pepper. Stir well to incorporate the seasonings.
  7. Reduce the heat to low and let the soup simmer uncovered for about 40 minutes, or until the barley is tender.
  8. Stir in the Romano beans and chopped kale. Continue to simmer for an additional 10-15 minutes until the kale is wilted and tender.
  9. Taste the soup and adjust the seasoning if necessary.
  10. Once everything is well combined and heated through, remove from heat and prepare to serve.
