  • 8 ounces goat cheese, softened
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar

  • Fresh herbs (such as thyme or basil) for garnish
  • Optional: Honey for drizzling

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the beets thoroughly, then wrap them in aluminum foil. Roast in the oven for about 30-40 minutes or until tender.
  3. Once cooked, remove the beets from the oven and let them cool slightly. Peel the skin off, then slice them into thin rounds.
  4. While the beets are roasting, arrange the baguette slices on a baking sheet. Brush one side lightly with olive oil.
  5. Place the baking sheet in the oven and toast for 5-7 minutes or until golden brown.
