  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup whole milk
  • 3 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 cup mixed fresh berries (strawberries, blueberries, raspberries)
  • 1 cup powdered sugar (for icing)
  • 2 tablespoons fresh lemon juice (for icing)
  • Additional berries for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch sheet pan.
  2. In a large bowl, sift together the flour, baking powder, and salt.
  3. In another bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, followed by the vanilla extract, mixing well after each addition.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, until just combined.
  6. Gently fold in the mixed fresh berries, being careful not to overmix.
  7. Pour the batter into the prepared sheet pan and spread it evenly.
  8. Place in the preheated oven and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  9. Remove from the oven and let it cool in the pan for 20-25 minutes. Then transfer to a wire rack to cool completely.
  10. In a small bowl, whisk together the powdered sugar and lemon juice until smooth.
  11. Once the cake has cooled, spread the icing over the top and garnish with additional fresh berries.
