1 can (15 oz) black beans, rinsed and drained
1 ripe avocado, mashed
1 tablespoon lime juice
½ teaspoon garlic powder
½ teaspoon cumin
Salt and pepper to taste
4 large flour tortillas
1 cup shredded lettuce
½ cup diced tomatoes
½ cup corn (frozen or canned)
½ cup shredded cheese (cheddar or Mexican blend)
Optional toppings: salsa, sour cream, cilantro
Instructions
In a bowl, mash the ripe avocado. Add lime juice, garlic powder, cumin, salt, and pepper. Mix until smooth and set aside.
In a small saucepan over medium heat, warm the black beans for about 5 minutes. Stir occasionally to prevent sticking.
In a separate skillet, warm the tortillas for about 30 seconds on each side until pliable.
On each tortilla, layer the following ingredients: a generous spoonful of black beans, a dollop of guacamole, a handful of shredded lettuce, diced tomatoes and corn, and a sprinkle of cheese.
Fold in the sides of the tortilla, then roll from the bottom up to enclose the filling tightly.
For added texture, place the assembled burritos seam-side down in the skillet for 1-2 minutes to crisp the outside.
Slice the burritos in half and serve with your favorite toppings, such as salsa, sour cream, or fresh cilantro.

You can use whole wheat tortillas for a healthier option.
