Instructions
In a large pot, heat the olive oil over medium heat.
Add the chopped onion and garlic to the pot. Sauté for 3-5 minutes, or until the onion is translucent.
Stir in the broccoli florets and cook for an additional 2-3 minutes.
Add the vegetable broth to the pot and bring the mixture to a boil.
Reduce the heat and let it simmer for 15-20 minutes until the broccoli is tender.
For a smooth soup, use an immersion blender to puree the mixture to your desired consistency. If you prefer a chunkier texture, you can skip this step.
Add the heavy cream and stir well to combine.
Gradually mix in the shredded cheddar cheese, allowing it to melt completely.
Add salt, black pepper, and cayenne pepper (if using) to taste. Adjust seasoning as desired.
If you want a thicker soup, mix cornstarch with a little water to create a slurry and stir it into the soup. Cook for an additional 2-3 minutes until thickened.

For a vegetarian option, ensure the broth is vegetable-based.
