  • 30 milliliters (2 tablespoons) of olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, crushed
  • 227 grams (8 ounces) ground beef
  • 794 grams (28 ounces) of crushed tomatoes
  • 12 teaspoons salt, to taste
  • 120 milliliters (1/2 cup) water, if needed
  • 6 grams (1/4 cup) fresh basil, thinly sliced
  • 57 grams (2 ounces) grated Parmesan cheese, plus extra for topping
  • 113 grams (8 tablespoons) melted unsalted butter
  • 2 teaspoons Italian seasoning mix
  • 1 teaspoon garlic powder
  • 16 slices mozzarella cheese, thin
  • 8 slices sturdy bread (sourdough recommended)

Instructions

  1. Heat olive oil in a large pan over medium heat. Add diced onion and cook until golden.
  2. Add crushed garlic and cook for 30 seconds to a minute until fragrant.
  3. Add ground beef, breaking it apart, and sprinkle with salt. Cook until browned.
  4. Pour in crushed tomatoes and water (if using). Season with salt to taste. Bring to a boil, then reduce heat, cover, and simmer for 1 hour, stirring occasionally.
  5. Stir in fresh basil. Turn off heat. Optionally, reserve 120 ml (1/2 cup) for dipping.
  6. While sauce simmers, cook spaghetti in salted boiling water until al dente. Drain.
  7. Combine cooked spaghetti with the tomato sauce. Stir in grated Parmesan cheese until melted and combined.
  8. Line a baking sheet with parchment paper. Spread the spaghetti mixture evenly in a 1-inch thick layer.
  9. In a small bowl, whisk together melted butter, garlic powder, and Italian seasoning.
  10. Slice the spaghetti layer into four equal portions.
  11. Butter one side of a bread slice and place it butter-side down. Layer with two slices of mozzarella, a spaghetti portion, two more mozzarella slices, and another bread slice, butter-side up. Repeat for remaining sandwiches.
  12. Heat a skillet over medium-low heat. Place one sandwich in the skillet, cover, and cook until the bottom is golden brown.
  13. Gently flip the sandwich, cover, and cook until the other side is golden and cheese is melted and gooey.
  14. Repeat with remaining sandwiches. Serve warm.

  • For extra flavor, add red pepper flakes to the sauce.
