2 boneless, skinless chicken breasts
1 cup teriyaki sauce
1 tablespoon vegetable oil
2 cups cooked white or brown rice
1 cup broccoli florets
1 cup carrots, sliced
1 cup snap peas
2 green onions, chopped
Sesame seeds for garnish (optional)
Pickled ginger (optional)
In a bowl, combine the chicken breasts and teriyaki sauce. Allow them to marinate for at least 15-20 minutes.
Prepare your rice according to package instructions. Set aside when done.
In a skillet, heat the vegetable oil over medium heat. Add broccoli, carrots, and snap peas. Sauté for 5-7 minutes until vegetables are tender but still crisp. Remove from heat.
In the same skillet, add the marinated chicken breasts. Cook for 6-7 minutes on each side or until fully cooked through and the internal temperature reaches 165°F (75°C).
Pour any remaining teriyaki sauce over the chicken in the skillet. Let it simmer for an additional 2-3 minutes.
Once cooked, remove the chicken from the skillet and slice it into bite-sized pieces.
In your bento box, add a portion of rice, the sautéed vegetables, and sliced chicken.
Sprinkle with chopped green onions and sesame seeds. Add pickled ginger if desired.
