  • 50g heavy cream

Instructions

  1. In a large pot, boil salted water and cook spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
  2. In a large skillet, cook the diced pancetta over medium heat until crispy, about 5-7 minutes. Remove from heat and set aside.
  3. In a bowl, whisk together the eggs, grated Parmesan cheese, and heavy cream until well combined. Season with salt and black pepper.
  4. Add the cooked spaghetti to the skillet with pancetta. Stir to combine and allow the pasta to absorb the flavors.
  5. Remove the skillet from heat. Quickly pour the egg mixture over the hot pasta, tossing vigorously to coat the spaghetti. Add reserved pasta water as needed to achieve a creamy consistency.
