  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon paprika (optional)

  • 1 cup buttermilk (or milk with a tablespoon of vinegar)
  • 1 cup breadcrumbs (panko or regular)
  • Vegetable oil, for frying

Instructions

  1. Peel and slice the onions into 1/4-inch thick rings. Separate the rings and set them aside.
  2. In a bowl, mix together the flour, baking powder, salt, paprika, and black pepper.
  3. In another bowl, pour the buttermilk.
  4. Dip each onion ring first into the flour mixture, coating well. Shake off any excess.
  5. Next, dip the coated onion rings into the buttermilk, ensuring they are well coated.
  6. After buttermilk, dredge the onion rings again in the flour mixture, then coat with breadcrumbs, pressing gently to adhere.
  7. In a deep skillet or fryer, heat about 2 inches of vegetable oil to 350°F (175°C).
  8. Carefully add the breaded onion rings to the hot oil in batches. Fry until they are golden brown, about 2-3 minutes per side.
  9. Use a slotted spoon to remove the onion rings and place them on a paper towel-lined plate to drain excess oil.
