4 ripe pears (such as Bosc or Anjou)
2 cups red wine (Merlot or Cabernet Sauvignon works great)
1 cup granulated sugar
1 cinnamon stick
2 star anise pods
1 teaspoon vanilla extract
1 tablespoon lemon juice
Zest of 1 orange
Pinch of salt
Instructions
Peel the pears, leaving the stems intact. Cut a small slice off the bottom of each pear to help them stand upright.
In a saucepan, combine the red wine, sugar, cinnamon stick, star anise, vanilla extract, lemon juice, orange zest, and salt. Stir well to dissolve the sugar.
Bring the mixture to a gentle simmer over medium heat.
Carefully add the pears to the saucepan, ensuring they are submerged in the liquid.
Simmer the pears for about 20-30 minutes, turning them occasionally, until they are tender but not mushy.
Once the pears are cooked, remove them from the poaching liquid and place them on a serving dish. Let them cool slightly.
Increase the heat and let the poaching liquid simmer until it reduces by half and thickens into a syrup.
