- 2 pounds of meat (lamb or beef), cut into chunks
- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- ÂĽ teaspoon cayenne pepper (optional)
- Salt and black pepper to taste
- 1 cup diced tomatoes (fresh or canned)
- 2 cups vegetable or chicken broth
- 1 cup chickpeas, drained and rinsed
- 1 cup mixed vegetables (carrots, peas, or bell peppers)
- Fresh parsley or cilantro for garnish
- Heat the olive oil over medium heat in a large pot.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute.
- Add the meat chunks, season with salt, black pepper, cumin, coriander, paprika, and cayenne pepper. Brown the meat on all sides.
