  • 2 small Red Onions (thinly sliced)
  • 2 cups White Vinegar (primary tang and acidity)
  • 2 cups Water (dilutes vinegar)
  • â…“ cup Cane Sugar (adds sweetness)
  • 2 tablespoons Sea Salt (enhances flavor)
  • 12 cloves Garlic (for earthy depth)
  • to taste Mixed Peppercorns (infuses subtle spiciness)

Instructions

  1. Peel and thinly slice the red onions. Set aside in a bowl.
  2. Divide the onions between clean glass jars, adding optional garlic and peppercorns if desired.
  3. In a saucepan, mix white vinegar, water, cane sugar, and sea salt. Heat until dissolved.
  4. Remove from heat and let the brine cool for 10-15 minutes.
  5. Pour the warm brine over the onions in jars until completely submerged.
  6. Allow to cool to room temperature without lids, then seal and refrigerate.
  7. Enjoy the pickled onions after one hour or overnight for maximum flavor.
