Comforting Greek Tomato & Orzo Soup that’s ready in 30 minutes.

Ingredients

  • 2 tablespoons Olive Oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 30 ounces Canned Tomatoes, pureed
  • 1 tablespoon Tomato Paste
  • ½ teaspoon Granulated Sugar, optional
  • Salt & Black Pepper, adjust to taste
  • 1 teaspoon Dried Oregano
  • ¼ teaspoon Crushed Red Pepper Flakes, optional
  • 1 cup Orzo Pasta
  • 6 cups Water
  • Feta, optional
  • 1 teaspoon Fresh Herbs, finely chopped

Instructions

  1. In a large pot, heat 2 tablespoons of olive oil over medium heat until it shimmers. Add 1 chopped onion and sauté for about 10 minutes, stirring occasionally, until the onion becomes soft and golden.
  2. Stir in 2 minced garlic cloves and sauté for an additional 20-30 seconds, then mix in 1 tablespoon of tomato paste, cooking for a minute.
  3. Pour in 30 ounces of pureed canned tomatoes and 6 cups of water, stirring well. Add ½ teaspoon of sugar, 1 teaspoon of dried oregano, and season with salt and black pepper to taste. Bring to a rolling boil.
  4. Stir in 1 cup of orzo pasta, reduce heat to medium-low, and simmer for about 8 minutes, stirring frequently.
  5. Taste and adjust seasoning. Add more salt, pepper, or crushed red pepper flakes if desired.
  6. Ladle the soup into bowls and garnish with crumbled feta and freshly chopped herbs.

Notes

  • This soup can be made with vegetable or chicken stock for added flavor.
  • Substitute orzo with any pasta shape you prefer.
  • Add more or less crushed red pepper flakes based on your spice preference.
