It’s an easy-to-make sandwich bursting with flavor, perfect for quick lunches or leisurely dinners.

  • 4 slices sourdough bread
  • 1 cup fresh mozzarella, sliced
  • 1 cup fresh spinach
  • 1 medium tomato, sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup balsamic vinaigrette
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat your grill or grill pan over medium heat. Lightly grease with olive oil to prevent sticking.
  2. In a bowl, combine the fresh mozzarella, spinach, tomato slices, and red onion. Drizzle 2 tablespoons of balsamic vinaigrette over the mixture and toss gently to coat. Season with salt and pepper to taste.
  3. Lay out 2 slices of sourdough bread on a clean surface. Divide the filling mixture evenly over each slice, then top with the remaining 2 slices of bread to create sandwiches.
  4. Brush the outside of each sandwich with olive oil. Place the sandwiches on the grill and cook for about 4-5 minutes on each side, or until the bread is golden brown and the cheese has melted. Press down lightly with a spatula to ensure even grilling.
  5. Once grilled, remove the sandwiches from the heat. Drizzle a little extra balsamic vinaigrette on top for added flavor and garnish with fresh basil leaves if desired.
  6. Cut the sandwiches in half and serve warm alongside a side salad or your favorite chips!
